The original and the best wagyu burger still kicks serious butt. The combination of scorchy full-blood wagyu beef with gruyère cheese, Schulz's Barossa bacon, Zuni pickle and house-made chilli and tomato sauce, all enclosed in a house-baked brioche bun ($24), comes together as both art and science in Neil Perry's moody, foodie side bar. Matching it to a Martinez, an Oregon pinot noir or a cold beer is one of the great pleasures of dining in Sydney. | |
