If you're looking for a good, honest, gutsy, hands-on, sauce-dripping-down-your-chin burger, then you've just found it. A fried egg, crisp bacon, tasty cheddar cheese, scorched meat patty (a blend of chuck and topside), mustard, lettuce, tomato and shredded beetroot marinated in orange and passionfruit juice are all ingeniously layered in a soft-crisp focaccia-like bun ($11.90). The vegetables are all supplied by one family, the eggs are open-range, and the meat is ground daily. The product of more than 20 years' research and evolution by the owners of cosy, cruisy, Café Giulia, it's a damn good burger.

The original and the best wagyu burger still kicks serious butt. The combination of scorchy full-blood wagyu beef with gruyère cheese, Schulz's Barossa bacon, Zuni pickle and house-made chilli and tomato sauce, all enclosed in a house-baked brioche bun ($24), comes together as both art and science in Neil Perry's moody, foodie side bar. Matching it to a Martinez, an Oregon pinot noir or a cold beer is one of the great pleasures of dining in Sydney.

Long before burgers came with a knife and fork, a Paul's Famous was Sydney's burger of choice. It's still a real beauty, thanks to the time-honoured recipe developed in 1957 and rigorously adhered to by staff as they meticulously assemble the Works burger ($8.50), their tongs swooping in to layer the soft seeded bun with lettuce, patty, cheese, bacon, egg, tomato, onion, pineapple - and beetroot, if you want.

You'll probably have to wait a good 20 minutes for your burger at this Manly burger bar, but that's a good thing. It means it's cooked to order and built from scratch. It also explains why there are always so many people hanging around outside, waiting with you. They know that when they order the Aussie burger, they're going to get a just-grilled prime-beef patty with good cheddar cheese, streaky bacon, fried egg, beetroot, lettuce, tomato sauce and aioli, all as snug as a bug in a lightly crisped bread roll ($11.50).

After coming second to the Rockpool wagyu burger in last year's Time Out burger wars grill-off, this very cheesy cheeseburger ($24) graduated from the bar menu of Neutral Bay Bar & Dining to star billing on the restaurant menu proper. It's not for the faint-hearted (think a super-thick 200-gram patty of full-fat beef, lots of strong melting cheese, raw shallot, sharp pickle and rich aioli served with hand-cut potato chips), but if you're going to have a cheeseburger, have a cheeseburger, damn it.

While everybody goes on about the gorgeous beer-battered fish and chips here, the burger has quietly crept onto the collective radar to win its own fan base. The excellent beef patty is nicely crusty, topped with beetroot tapenade, bacon, egg, fresh tomato, lettuce and chilli jam, stacked high in a good, substantial bun ($22). For that, you get great thick-cut chips thrown in, and the chance to linger longer over some of the best water views in the neighbourhood.

When was the last time a burger came up to your nose? This towering piece of high-rise hamburger real estate comes stacked to the gills with a good, thick patty of Wagga Wagga beef, a slice of fontina cheese, soft Salanova lettuce leaves, tomato salsa, dill pickles, chilli and fried onions, all artfully crammed into a handsomely glazed bun ($19.50) and speared with a wooden skewer to help maintain its equilibrium. It looks impossible to eat, but it isn't. Just press it down, pick it up and bite; the engineering won't let you down. Happy days.

By far the cutest of Sydney's food-truck fleet is the barn-like Veggie Patch van, complete with herb garden and rooftop solar panels. Owners Milenka Osen and Georgie Swift serve up a knockout vegetarian burger that tells tofu and tempeh to go jump, building itself around a golden zucchini and chickpea fritter instead. Further layers of beetroot relish, slow-roasted tomatoes, caramelised onions, spinach, coriander and a dill-cumin mayonnaise in a grain-strewn wholemeal bun ($10.50) make it a burger worth hitting the road for.

When the Merivale group opened The Fish Shop on the site of the old Lotus restaurant, there was no way they were going to take Dan Hong's Famous Cheeseburger off the menu. But in an effort to go with the fishy flow, chef Jeremy Strode added a crumbed-fish burger, of rich, fleshy mulloway, smoky grilled bacon, pickled jalape?os and Sriracha chilli sauce in a squishy, dude-food bun ($18.50).

There are wraps, salads and quesadillas on the menu as well as 15 different burgers at this popular Darlinghurst hole-in-the-wall, but feel free to ignore them all and head straight for the mother lode. The Aussie burger is nothing more complicated than a grilled beef patty, sautéed onion, crisp bacon, fried egg, beetroot and cheese ($10.90), but it makes a fine, fresh-tasting handful.
